The Extra Brut cuvée is essentially the same as the ‘Brut Réserve’ however it has received an extra two years extended ageing and receives less dosage (about 2.5g/L instead of 8g/L). Fresh and creamy on the nose, the palate is expansive and full. Possessing power, weight and an added depth, it shows just what the Grand Cru of Chouilly can achieve. Very limited in production, only about 3,000 bottles are produced annually.
Jean-Pierre Vazart created Extra Brut and Zéro from his Brut Réserve a decade ago. Reflective of his acute attention to detail, he begins dosage trials from zero for each blend. His Extra Brut is one of the few in Champagne that is able to present the cuvée of the house with balance and poise with lower dosage. It’s signature Chouilly, succulent, yellow-fruited and wonderfully generous, holding impeccable tension, thanks to fine acidity and heightened chalk mineral texture amplified by low dosage. Another year on lees has blessed it with a hint of malt and vanilla.
